DTOUR Diet Day 22 – Getting Back on Track

Week 4 – Day 22, Weight: 253.0

Due to a series of circumstances that kept me away from home for the last few days, I have not been following my DTOUR Diet. I tried to eat foods with Omega-3, calcium, fiber, and vitamin D though. So today I started back at Day 1.

Day 1 – 1600 calories

BREAKFAST
Veggie Omelet
1 slice whole grain bread
1 cup milk or in my case i have almond milk

LUNCH
tuna sandwich w/1tblsp. reg. mayo on 1 slice whole grain bread with 1 small tomato, green lettuce, and 4 chopped black olives

SNACK
8 ounces lowfat yogurt with 1/4 cup blackberries

DINNER
3 ounces grilled chicken with mrs. dash seasoning
2/3 cup brown rice
2 cups grilled veggies (mushrooms/onins/bell peppers

SNACK
1 small apple with 2 tsp. peanut butter

a lot of food!!!!

The D-TOUR Diet Day 16 – Video 1 – Chocolate Pecan Cheescake

Day 16 – Weight: 251.6

Chocolate-Pecan Cheesecake Recipe
Prep time: 15 minutes — Total time: 50 minutes + Chilling Time — Serves 8
Per serving: 168 cals, 11 g protein, 19 g carbs, 6 g fat (2 g saturated fat), 55 mg cholesterol, 27 mg sodium

3 tablespoons bran cereal crumbs
¼ teaspoon ground cinnamon
¼ cup + 2 tablespoons unsweetened cocoa powder
½ teaspoon instant coffee
1/3 cup boiling water
8 ounces fat-free cream cheese, softened
4 ounces reduced-fat cream cheese, softened
½ cup fat-free ricotta
2/3 cup confectioners sugar
2 omega-3-enriched eggs
1 egg white
2 teaspoons pure vanilla extract
½ ounce bittersweet chocolate, shaved
2 tablespoons finely chopped pecans

1. Position an oven rack in the bottom third of the oven. Preheat the oven to 325°F. Coat the bottom and sides of an 8” springform pan with cooking spray. Combine the cereal crumbs and cinnamon in a bowl. Sprinkle evenly over the pan bottom. Set aside.
2. Combine the cocoa powder, coffee, and water in a bowl. Stir until smooth. Set aside.
3. Combine the cream cheeses and ricotta in an electric mixer bowl. Beat at medium speed until smooth. Add the sugar. Reduce the speed to low and beat to incorporate. Add the eggs and egg white one at a time, beating until blended. Add the vanilla extract. Blend until smooth. Add the cocoa mixture and stir until completely incorporated. Pour into the prepared pan.
4. Bake for 30 to 35 minutes, or until the outer edges are set but the center still jiggles. Sprinkle the chocolate shavings and pecans evenly over the cheesecake. Return the cheesecake to the oven and bake for 2 to 3 minutes, or until the chocolate melts.
5. Remove to a rack to cool to room temperature. Cover and refrigerate overnight.
6. Remove the sides of the pan and cut into 8 wedges.

DTour Diet Day 15 – Eggs

Eggs are very instrumental to the DTOUR Diet. Problem is for me, I’m allergic to eggs. I don’t seem to have much of a problem with them as long as they aren’t cooked a certain way. Fried. And of course this is the way I like them best. And the way my husband made them for me on Easter Sunday.

Everything was going just peachy keen through most of the holiday’s family functions. That is until it was time to eat our early dinner/late lunch. Putting more food on top of the eggs only gave me the worst cramping/bloating that I’d had in a long time. It took all I had to make it home without screaming in pain and creating a scene. As a matter of fact, my family only knew that I “didn’t feel good”. Heating pads and pain relief eased my body to sleep until the bouts of bathroom visits started. Of course no one else was ill. Just me. It always seems that way too. So of course it can only be contributed to one thing. Eggs. I have to remember I can’t eat the suckers sunnyside up or over easy. scrambled is okay. boiled is okay. heck, even poached doesn’t seem to give me any problems.

Back to normal I am now, but I shall be wary of eggs.

DTour Diet Day 13 – Day Before Easter

Week 2 – Day 12, Weight: 253.0

Preparation for Easter festivities are in full swing in my household. We are gathering at my husband’s family’s home tomorrow for an afternoon meal. I have no plans on telling his family or anyone else of my diet, but have made sure to integrate my diet via our contribution to the family pot luck.

Holidays are a difficult time to be on any form of meal restriction. The problems that can arise are many. “Why can’t you eat this?” “Why are you eating just that?” “Here, have some of this food, I made it especially for you”.  These reasons alone are enough to either turn you away from your diet, or your family.

You have to be true to yourself to accomplish your goals. No one can do this for you. As I sit here almost 9 pounds down, I have to start being much more introspective and starting to visualize each day. Not the end figure of someone in a bikini or running a marathon, but what tomorrow will look like, or next week. Those are my reality. The holiday meal will be over in just a couple of hours, and I have to go back to this reality. My reality.

DTour Diet Day 12 – Toward the end of Week 2

Week 2 – Day 12, Weight: 254.6

So it comes to the end of the weekday part of Week #2 of my journey on the Diabetes DTour Diet. My insulin consumptions is down over 10 units a day. I have been more thirsty than hungry. I seem to be really gassy. Now this last item may be because of some intestinal disorder (I do have gastroparesis), or because of the amount of fiber that is on this diet. I have felt fuller, even though I am eating less. I have noticed a little less bloating than normal.

On the DTOUR, my fiber goal is 25 grams per day. Not taken from a powdery supplement, but from real food. I’ve been lucky in that juicy berries are just coming into season here in California. I am also lucky in that we have a huge strawberry bed that is flowering and soon will have tons of berries perfect for eating. We had so many of this luscious fruit last year, that I had gallon zip-loc bags FULL in my freezer. We just ran out last week.

Fresh greens and beans are also excellent sources of fiber. A nice big bowl of chili sounds good right about now!

DTour Diet Day 11 – Temptation

My daughter is currently attending Culinary School to obtain her Baking and Pastry Certification. About once or twice a week she brings home goody boxes full of creations that have been baked by the students. I can handle most baked goods, but not eclairs, thankfully there were only 2 mini ones in her box this time. What are your temptations?

D-Tour Diet Day 10: Same Food Boredom

Week 2 – Day 10, Weight: 255.4

I have a tendency to eat the same food when I am on diets. Either I get picky about the choices, or get in a rut. I find that I do this also when I’m not on diets. I remember growing up, I would only eat the same food for months on end, until I grew tired of it, and never ate it again. I did this with cheeseburgers – Summer of 1970. I did this with Peanut Butter and Jelly sandwiches – 1972 school year. As a matter of fact, some foods that I’ve eaten like that I can’t even stomach thinking about them and they make me nauseous.

I’ve been determined to not do that with this diet, but of course it never helps to think too hard about it. Spinach and eggs. Perfect D-Tour Diet foods. LOVE THEM! Now I have to remember not to eat them solely, or I’ll never want to touch them again… Now where was that quiche recipe?

D-Tour Diet Day 9 – Forgetting to Eat & Knowing When You Are Hungry

I’m always amazed that there are times I truly forget to eat. Up at 6am, out the door at 7am, back home, then the phone starts ringing, dealing with insurance (car and medical), and on and and on and on. By the time I look up, it’s 3pm! Where did the day go? And then, I’m starving! Trying to remember to make a plan and stick with it, is what this diet calls for. I have to remember the night before to set up my daily plan and stick with it.

It was raining off and on today, and it is planned that way again for tomorrow. I had wanted to start walking. Walking can be exhausting for me, so it is definitely a planned activity. Now that I have been taking the lasix, the swelling has gone down in my feet, and I can now get my walking shoes on. Such a relief! I thought I was going to have to start my walking in my flip flops! I can’t wait to get a going with an exercise program. For now all I have planned is walking, as that to me hasn’t been accomplished that much. Gotta get a moving, one step at a time.

D-Tour Diet Day 8 – Stress and Dieting

Week 2 – Day 8, Weight: 255.2

I used to be a stress eater. Times would get tough and I would head to the fridge. Now I have a tendency to not even touch food when I’m stressed out. The biggest thing that I have to remember is to always do these simple steps when I’m stressing out.

1. Try not to skip meals – eat at least three meals a day, with a few simple snacks.
2. Try to eat at the same time each day.
3. Separate eating from other things.
4. A stressful time may be a good time to eat in a very structured way.
5. Remember good nutrition through good foods. The D-Tour Diet Cookbook is great for this, as the recipes are simple, nutritious, and yummy!

Stress food is also a handy thing to have in your fridge at all times. I find the carrots and celery to be great stress food. Munching and crunching on them helps take out the aggression and doesn’t hurt my blood sugar or my diet!

The D-Tour Diet, Day 6 – First Battle

Week 1, Day 6 – Weight: 255.0

I spent most of today all by myself… and the fridge. I am a grazer. A piece of cheese here, a chip there. How do I deal with grazing, as this could be my problem to breaking it all? Remembering to eat my 3 meals and my snacks. I may not want to eat, but if I don’t do it when I should, I’ll probably eat more because I’m really hungry at a time I shouldn’t be.

I’d love to know everyone’s ideas on how they deal with grazing. Are you a 3 meal a day kind of person?
